In fact, pasta is one of the most healthful and nutritious foods for all ages and it is now recommended as one of the basic dishes of the famous "Mediterranean Diet". A light and easy to digest source of energy, rich in carbohydrates and particularly low in fat, cholesterol and sodium. It would be hard to find a more movingly direct hymn to the glories of pasta than the humble hymn of English writer Somerset Maugham, who wrote: " I like all simple things; boiled eggs, oysters and caviar, truite au bleu, grilled salmon, roast lamb, cold grouse, treacle tart and rice pudding.
