Cook pasta. Clean the artichokes by cutting off the bottom and remove the outer leaves and soak them in cold water with lemon. Fry garlic and onion, add the artichokes cut into thin slices and cook until they turn golden brown. Then pour the wine, add the peas, salt and pepper and continue simmering on low heat, stirring occasionally. When the wine evaporates, add a little water if necessary to maintain the required density of sauce. Mix with pasta and sprinkle with finely chopped parsley.
