Pasta with porcini mushrooms and eggplant

INGREDIENTS

  • Durum Tubetti lisci- 400g
  • dried porcini mushrooms- 50g
  • eggplant- 400g
  • tomatoes - 4 pcs
  • olive oil - 4 tbsp
  • Garlic - 1 clove
  • white wine - 150ml
  • Parmesan cheese - 100g

PREPARATION

Cook pasta. Soak the porcini mushrooms in a bowl with hot water. Peel the eggplant, cut into cubes and soak in salted cold water to stand for half an hour. Peel tomatoes and dice. Mushrooms cut into smaller pieces. Eggplant strain and then fry in hot oil, add chopped garlic, tomatoes and mushrooms. Cook for five minutes, then pour the wine, let it boil and add water in which mushroom were cooked, and cook for ten minutes more on medium heat. Spice if necessary. Sprinkle with grated Parmesan and decorate with green herbs.
