Pasta with spinach and ricotta

INGREDIENTS

  • Durum fusilli - 4 cups
  • Olive oil
  • Vinegar - 1 tablespoon
  • Young spinach - 100g
  • Young onions - 2 pieces
  • Raisins - 1 cup
  • Ricotta (soft cheese) - 1 cup
  • Fresh basil
  • Parmesan

PREPARATION

Cook pasta. Add a little of olive oil, a tablespoon of vinegar, spinach leaves and diced green onions. Add the raisins, ricotta, half a teaspoon of salt and pepper, and fresh basil. Stir and sprinkle with Parmesan cheese.
