Pasta with lentils ragu

INGREDIENTS

  • Durum Spaghetti - 500g
  • lentils - 200g
  • sliced sausage - 100g
  • olive oil - 4 tbsp
  • Red hot peppers
  • onion - 1 head
  • Garlic - 1 clove
  • white wine - 125ml
  • Water - 1 dl
  • Carrot - 1 piece
  • leeks - 1 piece
  • Tomatoes - 2 pieces

PREPARATION

Cook pasta. Soak lentils and leave them to swell. In the heated olive oil fry finely chopped onion, pepper and sausages. Add lentils, wine and water, cover, and on low heat cook for 40 minutes. Then add the diced chopped carrots, leeks and tomatoes that you previously peeled and cooked together for another 15 minutes. Add the pasta and decorate with parsley leaves.
